You have at least 2 external drives, each of which stores multiple copies of your files and your swap them at least weekly and take one off-site. You also use a remote backup service to send your data in an encrypted format to be backed up.

Best Option
 You have multiple external drives that are swapped daily with only the currently drive being used at your home/office. Other drives are stored off-site and brought in when needed to be swapped. All the data on these drives is encrypted to if someone somehow gets a hold of them, they can not possibly access the data. You also use an encrypted off-site backup service that can put your files back on your network right over the internet in the even a file is deleted or damaged.

No.  Each backup takes  new or changed files and adds them to the backup.  There are not old versions of your files, only the most current but if you delete a file it stays on your backup for as long as you have the service.
